Bidirectional
Record sounds from the front and rear of the microphone. Typically used for interviews/duets while sitting on opposite sides of the microphone
Stereo
Uses both left and right audio channels to capture a realistic sound image. Great for recording musical instruments or choirs
Omnidirectional
Picks up sound equally from all directions. Great for capturing the ambience of the venue, a multi-person podcast or a conference call.
